Would I find the fish in my lake to be more in the shallows or for more in the deeper water?

I live at Olympia, Washington in the NorthWest. The temperature here about now during the hottest time of day is about 75-80 degrees. I have Rainbow, Bullhead, Smallmouth, Largemouth, and crappies in the lake. I would just like to know if they are in the shallows or in the deep, and if possible, what bait to use. Thank you!
